Q: Can lactic acid bacteria be added to solid beverages? Is there a requirement for the total plate count?

A: Lactic acid bacteria can be added to solid beverages according to relevant regulations. GB 7101-2022 does not specify the requirement for the total plate count for live bacteria (unpasteurized) type beverages with aerobic and facultative anaerobic bacterial species added. Therefore, there is no total plate count requirement for solid beverages with lactic acid bacteria added. The microbial colonies detected according to the method in GB 4789.2-2022 National Food Safety Standard Food Microbiological Examination - Determination of Total Plate Count belong to the range of total plate count.
